Our Mushrooms

All our mushrooms are grown on up-cycled brewer's grain from Traverse City breweries or wild foraged by licensed foragers.

  • Blue Oyster

    The Blue Oyster, or Pleurotus ostreatus, is a meaty and beautiful mushroom. Some call it the gateway shroom. It absorbs the flavor of its complimentary dish, but also crisps up nicely in the pan as a standalone snack.

  • Yellow Oyster

    The Yellow Oyster, or Pleurotus citrinopileatus, is so cool - it's alsoeasilyone of the best smelling fresh mushrooms. The flavor of our Yellow Oyster is very subtle, and it has the unique characteristic of tasting as it smells. Similar to the Blue and Pink Oyster, it crisps up nicely and excels at taking on the flavor of its dish.

  • Pink Oyster

    The Pink Oyster, or Pleurotus djamor, is like a salmon, but (surprise) it's actually a mushroom! There are so many interesting ways to prepare this mushroom, but our favorite is pan searing the entire cap in butter and bacon salt.

  • Pearl King Oyster

    The Pearl King is a thick and meaty mushroom. The stems on this mushroom are often used as meat alternatives due to their sensational texture, and the cap is buttery and slightly softer.

  • Lion's Mane

    Lion's Mane, or Hericium erinaceus, offers a lot to the adventurous cook. Deep fry it for delicious tenders, or use it as a fish or meat alternative when you want to embellish your dish with something more unique. 

  • King Oyster

    The King Oyster, or Pleurotus eryngii, is thick. The stems on this mushroom are often used as meat alternatives due to their sensational texture. We find the transition from stem to cap on this mushroom tastes the best - there's just a little extra umami there.

  • Reishi

    Some might argue that Reishi, or Ganoderma lucidum, belongs on the wall as a piece of fine art. While we agree this mushroom is stunning, we also recognize it's impressive index of reported benefits. Reishi is believed to bolster a robust and dynamic immune system, improve sleep, aid in stress response andrelaxation, and is packed with antioxidants.

  • Cordyceps

    The Cordyceps fungus, or C. militaris, looks like a miniature orange club. Would it make a suitable pixie war club? Probably not. It has, however, been associated with improved energy, endurance, stamina, and immune function.

  • Lion's Mane

    Lion's Mane, while delicious to eat, also comes with unique medicinal benefits. The compounds in Lion's Mane, or Hercium erinaceus, are primarily associated with improved focus, mental clarity, memory performance, and a balanced mood.

  • Chaga

    The benefits of this medicinal mushroom have garnered praise over generations in traditional medicine as a potent antioxidant, a strong player in an adaptive immune system, a promoter of digestive health, and an excellent choice for combating fatigue.

  • Turkey Tail

    Turkey Tail, or Tremetes versicolor (among other names), is a widely-examined mushroom in therapeutics. It contains powerful compounds believed to have anti-cancer properties, immunomodulatory effects, and antioxidant properties. To boot, it can also make you poop (it's reported to improve digestive health).
